Preparing potatos/sweet potatoes
The other day I decided to buy a bag of sweet potatoes and a bag of red potatoes. I've read good stuff about sweet potatoes so I figured I'd give them a try. Grabbed the red ones to play with some variety. Having no idea how to safely prepare them (did some research too), I've just been having them raw. And really, so far so good. I've read that raw potatoes have some sorts of toxins, and cooking them increases their effect on blood sugar. Can anyone shed some light here? I'd love frying some potato chips in coconut oil but I'm sure that's too much heat.

if you did research and you come up with nothing showing that they are specifically poisonous when cooked then i think you should be fine cooking them. raw potatoes are pretty hard to stomach. cooking helps to break the starches down. if you are that worried just take an oil with a high smoke point and a good omega 3:6 ratio (so, avoid the corn oil for instance which is like all omega 6 compared to 3).

It's not so much the oil that worries me as much as how much cooking can the potato handle before it ends up being harmful (example: well cooked vs rare meat). The oils page is interesting though, gonna keep that.

Cooking methods that affect acrylamide production
Acrylamide cannot be created by boiling, and very few uncooked foods contain any detectable amounts.
Browning during baking, frying or deep-frying will produce acrylamide, and over-cooking foods may produce large amounts of acrylamide. The FDA has analyzed a variety of U.S. food products for levels of acrylamide since 2002. Results of the analysis can be found here.[20]

Even better than boiling as that wastes nutrients...cut it up into square-like shapes, and then steam it for a bit. It'll be soft enough to either mash or put into a smoothie (google: sweet potato smoothie recipes--yum!).
As for chips--go for it man. Especially in coconut oil!

There is extensive research about raw starches and the danger of starch-granulas getting into the small blood-vessels.
