Avoid carbs after dinner?
I've seen a couple different people say this, what is the reasoning?
I get ravenously hungry at night and tend to eat quite a bit, although I try to stop eating about 2-3 hours before sleep. For myself, that usually means a bowl of oatmeal and fruit around 9 PM, with bedtime around 11:30 or midnight.

There is no reason. It is a pseudoscience suggestion.

I don't know about "after dinner," but regarding carb ingestion and sleep:
"If you eat any carbs and protein within 4 hours of sleep you will never see the prolactin surge because any spike in insulin turns off this critical release." -- Dr. Jack Kruse M.D., Neurosurgeon, in a blog post about sleep.

Here's a study showing that having a serving of carbohydrates before bed is helpful in replenishing glycogen stores in the brain. Presumably, glycogen would be replenished in other tissues as well.
