how would you consume the sprouts CS, raw or cooked? Any others that compare with the sprouts? Did a little research and understood why its such a good veg.

The problem is plant proteins are not better than animal proteins in terms of digestibility. The acidic argument isn't quite right either. All proteins generate acidic products when they are digested. And meat doesn't take a long time to digest. You're basing that on the fact that protein requires a greater caloric expenditure to metabolize, and given that meat has a higher proportion of protein by weight, that it should require longer to digest. No, just a modest difference in the calories required to digest it. And if we are talking about digestion, the issue we're discussing in terms of plant proteins is the fact that many aren't digested properly, meaning they get to the gut without ever being digested and are able to act. The idea here is we must get away from the idea that plants were put here for us. The views we have towards vegetation are highly influenced by a very deeply rooted association between them and some vague notion that they were the intended food, or the food meant for us. We have to leave these notions out of the argument. The fact is plants are simply another life form that evolved alongside of us which happen to be rife in micronutrients. These plants don't just lend themselves to us for out betterment (fruit is another story), they aim to protect themselves and perpetuate themselves like any other lifeform, and for some species this means having developed defensive chemicals meant to deter other forms of life from eating them. We have to abandon this ethereal idea that vegetables are this metaphorical nectar offered up by the earth to man for his well being. It just isn't the case. But go back and watch that video, the fact is these chemicals are not always problematic. It is species specific and depends on several other factors such as cooking. And frankly, we just don't know how these chemicals actually act given their ingestion as part of a whole food. It all depends on epigenetic variability as to whether you are adapted to eating certain foods. I'm not saying vegetables are unhealthy, I'm saying whether any food is healthy depends upon what's eating it, not the food itself.
