Frozen vs fresh vegetables
Just wondering IH what's your view on frozen vegetables compared to fresh vegetables. I try to eat a lot of vegetables and of course prefer fresh vegetables but due to a variety of reasons its sometimes much easier to open up a pack of frozen brocolli rather than using a fresh one. DO you think frozen vegetables are as nutritious as fresh ones and do you think frozen vegetables are contaminated in any way? Fresh organic vegetables are the ultimate choice but they are way too expensive.

Grateful - Frozen is pretty close to good, it's only heat that's usually the problem. Frozen keeps all the enzymes.

The problem is that frozen vegetables are generally not organics....So welcome to pesticides, fungicides,fertilizer etc....
I prefer eat less fresh organic foods instead of lots of classic ones ( from the intensive farming) .
Moreover, frozen vegetables are usually coocked or pre-coocked or pre boiled etc....so they have lost most all their vits etc....and frozen, means industrial....most of the time, so you never know from where that is coming from, and how it is processed to make the final product : frozen veggies (organic or not...)

Thanks for that IH. Yeah, I've that too but thought I'd first get your opinion. Much appreciated. Thanks for your input too Europe. The frozen vegetables I buy while not organic are certainly not cooked. I just give them a light boiling or steam.

Europe brings up some very valid points that just made me rethink the notion that frozen is better. Google organic frozen vegetables, I'm sure there are sources online!

I recently stumbled upon the microwaveable steam in bag frozen vegetables.

I think IH has some info. on the hazards of miking. I usually avoid the microwave, and prefer the stove or raw.

There isn't much information in the way of studies on Microwaving food, but what information that does exist is so frightening to me, that I will not even use it for heating water.

Grateful - It really depends on what you are looking for in your veggies. Frozen veggies, unlike fruit, are blanched. This means that almost all of the enzymes are destroyed. So for live foodists frozen veggies are considered sub par. If you are not overly considered about the enzymes then frozens rate really high depending on your organic supplier.
The key point is that your fresh veggies are picked and shipped many days before their peak so some of the veggies never fully develop or ripen. So a lot of times you get a good amount of flavor loss. Frozen veggie's are frozen at their peak and retain pretty much their full nutrient spectrum. Frozen fruits, which are not blanched, still lose about 30% of their enzymes simply due to the process.
