How do probiotics in sauerkraut survive stomach acid?
I take the Jarrow's EPS intrinsically coated probiotics. I have had this question for a while.. how do (or why would) probiotics in sauerkraut, kefir or any fermented food survive the journey to the intestines without being destroyed by the stomach acid?

Idem for Resveratrol, it burn by stomach acid.

The ph of sauerkraut itself is quite low, this indicates that the probiotics in that stuff are kind of acid resistent.

Many can survive acid AFIAK thanks to the thick cell wall made of different materials... some have more resistance than others to acid and bile.
Strains coming from sauerkraut can survive stomach acid, I've read it in studies.
