I have been eating copious amounts of pasta (semolina) for the past week and absolutely no bread whatsoever. I have come to realize that pasta presents absolutely no problem for me. However, bread does trigger all of the bad stuff that I had associated with gluten. The only difference I can surmise that makes sense is the presence of yeast. In fact, my allergist did tell me to avoid yeast, but I let that go in one ear and out the other until now. So I guess I can take myself off the gluten intolerance list.

Gibson - There are many cases where some can eat plenty of wheat/gluten but only when they eat GMO do they face problems, and then for others, it could be how the food is made, such as yeast (to make the bread rise).

Nothing like trial and error, good post.
