The clear fluid part in kefir Empty The clear fluid part in kefir

After letting milk kefir sit for a while it separates. The white milky fluid stays on the bottom and the clear yellowish fluid stays on top. I was thinking about it and wondering if the clear fluid part is more concentrated, what if you only applied the yellowish part topically?

I guess someone else who knows better will chime in, but at least in yoghurt, I've been told that the clear liquid that collects at the top is actually whey? Could anyone confirm this?
