Induction cookers definitely beat a standard resistance-based heating element. Like gas, they heat to the right temperature instantly. The main drawback is the cookware one must use - ceramic crockware and copper skillets won't work.

I prefer gas, because of the precision and speed, but also because of the ability to "flash" the oil in a saute pan.
