Whole grain sourdough, cooking with butter?
First thing, is whole grain, or wheat sourdough as good for you as regular sourdough? I'm not sure how the baking process works, are the grains fermented, added in after or what?
Second thing, is frying things in butter healthier than olive oil? There are some things you don't want to cook with coconut oil because of the taste.

A lot of the stuff we've been told in here is to not fry/heat up olive oil - using it in the raw/uncooked form is okay, but heating up causes problems. I've been using butter or coconut oil. Sometimes the coconut oil is too much for certain dishes so I just go with butter. Don't use Canola oil.
I don't know the answers on Sourdough though. Never sure if the sourdough is made from a wheat flour if it's still okay. Need CS to weigh in on that one or do a search - it's been discussed several times in here over the years.

Sourdough contains lactic acid bacteria, which neutralizes the gluten it originally contained, so it's usually very well tolerated, despite being made from wheat.

Hey CS,
I was at the grocery store yesterday and saw a package of sliced sourdough bread. Looked at the ingredients, one of which was wheat gluten. What are your thoughts? should I avoid it?
