Low Heat Scrambled Eggs?
Hey all
After reading some articles and discovering that apparently high heat scrambled eggs are the worst way to cook eggs (health wise) due to "cholesterol oxidation" from the high temperatures, is it safe to assume that if I simply make scrambled eggs on LOW heat (but obviously cooking it longer) that I can avoid this problem?

I had an incredibly strict diet of cutting out most foods for a couple of years. Now that I have reintroduced ingesting eggs from a local farm on low heat (sunny side up, over easy, scrambled) seems okay for me. I believe eggs now are regarded as an okay food.

I always thought they were an OK food but apparently high heat scrambling messes with something

Yep, I tried on low heat today and they were a totally different color, nice and white (but I didn't break the yolks). Before they would be way overcooked like really yellow, and brown in some spots.

^ Also, I'd eat them raw (the most nutritious way) but I just don't like them that way at all
