Killing vitamines.

Hi, this might be an old well-known fact, but I came across to it recently and was not sure if it is true so I am asking. I've heard that cuttin your vegetables or fruits with steel knife create a slight electricity, which destroyes all of the vitamines. There was also some Japaness study on this, whish suggests to use ceramic knife.So my question: is this true? And what other food-handeling we should avoid in order to destroy the least vitamines possible?.

Trying not to be paranoid may save your brain - much needed to not become a vegetable yourself....

Don't worry Master. The veggies/fruits of today are so low in nutrients anyway

Yeah that is right:-) It is just sad that we can not get enough vitamines/minerals from food we eat.
